  • 1/4 teaspoon cinnamon
  • 3/4 teaspoon nutmeg
  • 1/2 bananas, mashed
  • (about 12 ounces) tablespoons unsweetened cocoa powder
  • (about 32 grams) 3 tablespoons butter, melted and cooled slightly (for brushing on top)
  • 2 tablespoons milk chocolate chips (or 1/2 cup dark chocolate chips, melted)

Directions:

Preheat the oven to 375 degrees F (190 degrees C). Grease and flour an 8x8 inch baking pan. In a medium bowl, whisk together the flour, baking powder, salt, cinnamon and nutmeg. In the same bowl, mash the bananas with a fork or an immersion blender until smooth. Stir in the cocoa and butter. Pour the banana mixture into the prepared pan. Sprinkle with Nuts, chocolate chips or dark chocolate chips. Bake for 25 minutes or until the centre is set and edges are lightly browned.

 

3-   Caramel Apple Pie with Pecans

Ingredients:

  • 1/4 cup unsalted butter, at room temperature

  • 3 teaspoons vanilla extract
  • 1/2 cups Granny Smith apples, peeled and cored
  • 1 tablespoon honey
  • 11/2 tablespoons all-purpose flour
  • 1 tablespoon cornstarch (about 2 tablespoons)
  • 6 tablespoons cold water
  • 1/4 teaspoon salt
  • 1/2 cup slivered pecans, toasted

Directions:

Preheat the oven to 375 degrees F (190 degrees C). Grease and flour an 8x8 inch baking pan. In a medium bowl, whisk together the butter and sugar until light and fluffy.
